Healthy Anzac Biscuits

A little word on the humble Anzac. I’m sorry guys, but It’s NOT an ANZAC biscuit if there are no oats. So all those paleo-schmaleo versions out there using almond meal and such – NO. Just no. If it ain’t broke…

The perfect combination of crunchy and chewy, I’ve used wholemeal spelt flour for these biscuits and replaced all that butter with coconut oil and all the traditional amount of sugar for coconut sugar and a bit of maple syrup. These happen to be #vegan too!

For all my international followers, ANZAC biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.  Both Australia and New Zealand claim to have invented it – however seeing I am on the right side of the ditch, I’ll go with the Aussies for the win there 😉

{makes about 12 biscuits}

  • 1/2 cup spelt flour (I used wholemeal but white would work)
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut sugar
  • 1/2 cup oats
  • pinch of fine sea salt
  • 1/4 cup coconut oil (or organic butter if you like)
  • 2 Tbsp Maple syrup
  • 1/2 tsp bi-carb soda
  • 1 tsp vanilla extract
  • 2 Tbsp warm water
  1. Preheat the oven to 150 degrees C (300 F) and line a baking tray with non-stick baking paper.
  2. In a large bowl, mix together the spelt flour, coconut, sugar, oats and salt in a large bowl.
  3. In a small saucepan, melt the coconut oil then add the Maple syrup, vanilla and bi-carb soda. Mine didn’t really fizz up here, but I suspect that’s because the coconut oil was pretty  much melted (#queenslandweather)
  4. Add the wet ingredients to the dry ingredients and stir well. Add the water before shaping into balls and flattening with a fork.
  5. Bake for about 25 minutes and allow to cool for 30 minutes. I like mine crunchy so I actually left them in the oven (turned off) for an extra 5-10 minutes. Err on the lower side of 25 minutes if you prefer chewy.
