Apple, Cinnamon & Peanut Butter Oats

The weather is getting fresh (and by fresh I mean sub-25°C for us Queenslanders!) and there is no better time to enjoy this dish. Sitting in the sun, wrapped up in a blanket with your dog – optional.

  • 1/3 cup oats (I use Spelt oats) + handful of nuts (I am currently obsessed with Pecans), soaked in water overnight and then well rinsed through a strainer
  • 2/3 cup milk (I use Coconut or Almond)
  • 1 Tbsp natural peanut butter
  • 1/2 apple (chopped or grated)
  • 1 drop doTERRA Cinnamon Bark oil (sub with 1/2 tsp powder)
  • coconut + honey, to serve
  1. Pop the soaked and well-rinsed oats/nuts combo into a small saucepan and heat to a medium-high level. (Soaking the oats and nuts neutralizes phytic acid and enzyme inhibitors naturally present which can interfere with digestion and mineral absorption. You need to make sure you rinse really well and not use the ‘mucky’ water left over from soaking.)
  2. Add the milk and cook for about 3 minutes until thickened.
  3. Add the peanut butter, stir well and continue cooking for another 3 minutes or so.
  4. Add the cinnamon oil and stir well.
  5. You have the option to cook the apple with the oats or add in on top for some crunch.
  6. Serve with coconut flakes and a drizzle of honey.
